Roasted Vegetables Ham and Pesto Pasta

I had some leftover pesto and ham and so, with the magic of google, I found this recipe and modified it to what I had in my pantry. It was yummy!

Makes 2-3 servings

Ingredients:

  • 200g of macaroni pasta
  • 1 eggplant, cut into bite sizes
  • 1 zucchini, cut into bite sizes
  • 1 yellow bell pepper, cut into bite sizes
  • 2 tomatoes, cut into bite sizes
  • 1 red onion, cut into bite sizes
  • 1/2 bottle (100g) of pesto
  • 100g ham, cut into bite sizes
  • 5 cloves of garlic, finely chopped
  • 1 Tbs Italian herbes
  • Olive oil
  • Salt and pepper

Steps:

  • Preheat oven to 200C/ baking mode with fan
  • Toss all vegetables in olive oil and herbs. Cook in oven for 30mins or until the vegetables are very soft
  • While the vegetables are cooking, saute ham in little olive oil under medium high heat until browned
  • Cook the pasta until al dente (2mins lesser than indicated on box). Drain and mix well with pesto
  • On a plate, spoon pesto pasta top with vegetables and ham. Bon appetit!
