Roasted Salmon, Cauliflower, Cherry Tomatoes with Penne


4 cloves of garlic
2 red onions (cut into wedges)
15 cherry tomatoes
1 head of cauliflower (cut into small florets)
4 anchovies
2Tbsp of olive oil
2Tbsp of anchovies oil
1 red chilli
50g raisins
1 salmon fillet
400g penne (cooked as instructed)
Salt and pepper


1. Heat oven to 180 degrees. Place the raisins in a small pot, add enough water to cover and bring to a boil. Remove from heat and let sit 15 minutes. Drain and set aside.

2. Gather garlic, anchovies, and red chilli into a pile. Using a chefs knife, coarsely chop; season generously with salt. Using flat side of knife blade, mash mixture into a paste.

3. Place paste into a large bowl; add oils, and mix to combine. Add cauliflower, tomatoes, onions and toss to coat. Spread mixture in a single layer on a large baking tray. Roast until starting to soften, about 15 minutes.

4. Season salmon with salt, pepper and herbs. Push cauliflower to sides, and place fillets in the center. Arrange two half-slices of lemon on each fillet. Return to oven; bake until fish is opaque throughout, 10 to 15 minutes. Toss with penne and serve with lemon wedges.
