Hey, I don’t know how it came by but I can cook! Thanks to Jamie Magazine May ’10 (Did you know that this guy has his own magazine as well?)

Sorry about the picture, so hungry that I snapped in haste but trust me, it was yummy.

Here’s my recipe (a modified version of Jamie’s):

Serves 4

  • 4 chicken thighs
  • 2 handful of cherry tomatoes
  • Bunch of basil leaves
  • 1 garlic bulb, broken into cloves, skin on
  • Handful of black olives, stoned (I squeezed them!)
  • Olive oil
  • 1 red chilli
  • 8 slices of thin-sliced smokey streaky bacon
  • 4 potatoes

1. Preheat oven to 180°C
2. Chuck everything except bacon in a big roasting tray, drizzle with generous amount of olive oil, salt and pepper over, mixed up.
3. Grill for 30 mins. Turn chicken over. Grill for another 30 mins.
4. Lay bacon on top of chicken and continue to grill for another 15 mins.
5. Ready to serve! Great with salad.
